Morning all, and welcome to the week where the kids go back to school and our forecasts, hopefully, go back to reality. Last week gave us a proper mixed bag: coffee and customers turned up in style, availability had a bit of a lie-in. Bank Holiday's behind us, autumn's in front of us, so let's get after it.

Availability finished under target across the patch, and the honest answer is sandwiches are doing most of the dragging at a level none of us love. Summertown and Jericho, take a bow, you were comfortably clear of target while the rest of us were rummaging in the fridge, and Witney held above too. Gerrards Cross, you called it yourselves on key products, so let's get the ordering and kitchen call locked in early doors and see what a full counter does for your day. Henley, selling out because sales beat forecast is the nicer version of this problem, but it's still a customer walking out empty handed. Get sandwiches right and half the other numbers on this email start behaving themselves.

Summertown, 88% availability against an 80% target is the best number on the patch and it comes from ordering to the day you're actually having, not the one on the spreadsheet. Everyone else, steal the habit of checking gaps before the rush rather than during it.

Pastries are carrying the category table on their shoulders and deserve a lie down. Sweets and cakes held up respectably too, which suggests the morning routines are landing where we've got the bakes right. Sandwiches are where the gap sits, and it's an area-wide thing rather than anyone's private problem, so it's kitchen liaison, honest forecasts and getting the make list finished before the lunch rush arrives. Marlow have already gone back to the kitchen to lift stock levels, which is exactly the conversation the rest of us should be having. Fix sandwiches and lunchtime stops being a lottery.

Coffee is the good news story of the week, area average sitting nicely above target and carrying the mood. Jericho, Henley and Summertown, you were miles clear and making it look easy, and Gerrards Cross and Reading were comfortably in the green too. Marlow, nobody's judging a bar that had water coming through the ceiling and builders doing the tango behind the counter, so now the leak's fixed let's reset the grind and dial back in. Beaconsfield and Thame, what would help, a barista routine refresh or a proper calibration morning? Hold this and coffee becomes the thing we brag about, not the thing we chase.

Waste is a game of small margins and a few of us handed the margins away last week. Reading and Henley, genuinely tidy work coming in under budget, and Summertown and Gerrards Cross kept the lid on too. Witney, you've already diagnosed it yourselves with batch sizes and splitting two day products, so let's get that plan running properly this week and I'll help with the order build if it's useful. Marlow's overspend came with a ceiling on the floor, which is about as good an excuse as this job offers. Tighten the afternoon bakes and most of this comes back to us.

Sales landed just under forecast across the patch, which for a Bank Holiday week where half of Oxfordshire was apparently somewhere else entirely is a fairly honest result. Banbury, take a bow, you were the one site that looked at the forecast, said "hold my flat white" and beat it anyway, and Henley and Thame both nudged over the line too. The L4L numbers are the sting in the tail for most of us, so nobody's sitting alone on that one; Summertown, worth a look together at whether the trading pattern has shifted with the students back, and shout if you want a hand reading it. With school runs restarting and proper coffee weather rolling in, this is the week our morning trade remembers where it lives.

Labour is running hot in a few places, mostly because sales dipped rather than anyone gone mad on the rota. Marlow and Jericho, both under budget and still trading well, that's the balance we want. Witney, you're carrying training hours which is the right investment, and now that's done the passive shifts should come out in the wash. Beaconsfield and Summertown, worth a fresh look at where the hours sit against the actual trading pattern rather than the one we had in July. Match the shape of the day and this tidies up quickly.

Customers were kind to us, area average landed above target and that's not an accident. Witney and Summertown, you were streets clear and clearly doing something right at the counter, with Jericho, Marlow and Reading all comfortably ahead too. Beaconsfield, a couple of pointed comments can bruise a monthly score more than they deserve, so let's look at bread quantities on the counter and keep the service warm while it settles. Gerrards Cross, your own plan is spot on, available product plus proactive team, and that combination almost always shows up in the score. Keep talking to people like humans and this stays healthy.

Travel Path completion has come on a long way, with Jericho, Reading and Witney at the full hundred and Summertown right behind them. Henley, you were honest that customers came first and the admin came second, which is the right instinct even if the tick boxes disagree, and moving your Travel Path to a quieter slot should sort it. Marlow, post-shift completion is the one to chip away at, and daily reminders in the group have worked for others, so borrow shamelessly. Jericho, twenty two flags isn't chaos, it's a team actually telling us what's broken, which I'd take every week. Log it, fix it, move on.
